Ultra Mega Nachos

Are you prepared for Ultimate Flavor?  Would you like a Cheesy Flavor Explosion in your mouth?  Of course you do!  With Ultra Mega Nachos all your wildest dreams will come true and more.  I've decided to share my closely guarded secret for this delectable treat for the world to enjoy.

I'll provide information for the Ultra Mega Nachos I made, but feel free to add or subtract your own awesomeness*.

What You Need - Grocery List

  • 12 inch pizza pan or similar baking sheet
  • 1 bag of tortilla chips
  • 1 can refried beans
  • 1 can of chunk/shredded chicken
  • 1 package taco seasoning
  • 1 small onion
  • 1 bag of shredded cheese
  • 1 jar jalapeno slices

Instructions

  1. Cover the baking sheet with tortilla chips.  I used two-thirds of a bag (approx 7oz) of Kroger Restaurant Style Tortilla Chips and they worked very well.
  2. Spoon clumps of refried beans onto the chips.  I used about 14oz of Kroger Fat Free Refried Beans.
  3. Chop the onion and sprinkle the onion chunks over the chips.
  4. Cover the chips with your favorite shredded cheese.  I used 8oz of Kroger Mild Cheddar Cheese.
  5. Shake the taco seasoning over the cheese.  I used half a 1.25oz package of Old El Paso Original Taco Seasoning Mix.
  6. Feather the chunk chicken with a fork and spread it over the cheese.  I used about 4oz of Kirkland Premium Chunk Chicken Breast.
  7. Top it off with some jalapeno slices.  
  8. Preheat the oven to 350 degrees.
  9. Place the sheet into the oven and bake for 20 minutes.

Serving Suggestions

Consider serving with the following toppings:

  • Guacamole 
  • Sour Creme
  • Salsa

Alternative Ingredients / Upgrades

I've tried to outline a recipe with minimal work and cost, but ingredients could certainly be upgraded over what I've used here.

If you're not a fan of canned chicken, use grilled chicken.  Consider using bacon instead.  Instead of adding just bacon, use chicken AND bacon!

If you grow your own chili peppers, and do not want to use processed taco seasoning, consider using homemade seasoning.

Additionally, other chili peppers could be added, preferably fresh chilis:

  • Hungarian Wax Peppers
  • Habanero Peppers
  • Kung Pao Peppers
  • Bananna Peppers
  • Anaheim Chilis
